Did it all for the Cookie
It only took 12 different variations to nail down the perfect oatmeal cookie, tasty enough to don the name of New England & Me. I don’t want any of this artificial superficial feeling stimulated by the choir. Today I have proved myself a glutton. Nothing left to say of me, I did it all for the cookie.
1/2 C (1 stick) of butter, softened 2 eggs
3/4 C firmly packed brown sugar 1/2 C granulated sugar
1 tsp vanilla 1 1/2 C all purpose flour
1 tsp baking soda 1 tsp cinnamon
1/2 tsp salt 1 tbs millet
3 C Oats (quick or old fashioned) 1 C semi sweet chocolate chips (we use mini)
1. Heat oven to 350F. In a large bowl, beat butter and sugars on medium speed of electric mixer until creamy.
2. Add eggs and vanilla; beat well.
3. Add combined flour, baking soda, cinnamon, salt, and millet; mix well.
4. Add oats and chocolate chips; mix well.
5. Drop dough by rounded tablespoonfuls onto parchement lined cookie sheets.
6. Bake 8-10 minutes or until lightly golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered. Makes about 4 dozen cookies.
